This recipe has been a staple of mine for quite some time. Use it as a topping for yogurt and smoothie bowls, pour some milk over it for a great breakfast, or if you’re anything like me…eat it straight out the jar!
What You’ll Need
2 Cups Old Fashioned Rolled Oats (not the quick kind)
1/4 Cup Avocado Oil (any neutral oil will work)
1/4 Cup Pure Maple Syrup
1 Cup Toppings (I use a mixture of whatever I have on hand – cranberries, cashews, sunflower seeds, pecans, pepitas)
1/2 Teaspoon Cinnamon
1/2 Teaspoon Sea Salt
Vanilla Extract
Just wait until you smell this in the oven…heaven.
Instructions
- Preheat oven to 400 degrees, Line a large baking sheet with parchment paper or a silicone mat.
- Add plain oats to oven for 5 minutes, remove.
- Turn the oven temperature down to 325 degrees.
- In one bowl, add the oil, maple syrup, and vanilla extract. Gently stir.
- Pour in the oats, cinnamon, salt, and toppings. Gently stir until everything is coated.
- Pour mixture into pan and use a spatula to press granola down and create an even layer.
- Bake about 20-25 minutes, until oats are lightly golden. Remove from the oven.
- Leave granola to cool for at least 40 minutes. The granola will continue to crisp as it cools.
