Rich, creamy, comforting. The perfect addition to your next ‘Self Care Sunday’. Need I say more?
This recipe makes 1 serving.
What You’ll Need
1/3 cup Stoneground Grits
1/2 cup Low Sodium Chicken Broth
1/2 cup Water
2 tbsp. Half & Half
1 tbsp. Butter
5 Jumbo Shrimp (tails removed, deveined, peeled)
1 tsp. Lemon Juice
1/2 tsp. Cajun Seasoning
2 Garlic Cloves, minced
Salt & Pepper, to taste
1 Slice of Thick-Cut Bacon
Bell Pepper, sliced thin (Yellow and Green work really well for this dish)
Onion, slice thin
2 tbsp. Sharp Cheddar Cheese
1 Green onion, chopped thin
Sprinkle of Crushed Red Pepper Flakes
Instructions
- Season shrimp with lemon juice and your favorite Cajun seasoning, set aside.
- In a medium sauce pan, add water, chicken broth, a sprinkle of salt & bring to a boil. Slowly stir in grits. Turn heat down to low-medium. Place a top on the pan.
- Pay close attention to the package instructions for the grits. It should take about 10 minutes for the grits to absorb all the liquid and become creamy. *Don’t be afraid to add about 1/4 cup more water if the grits are thicker than your preference*
- While the grits continue to cook, cook bacon in a skillet over medium heat until crispy. Break into pieces.
- In a separate skillet, add a few slices of bell pepper and onion. Add a splash of water to help soften, cook until fork-tender. This should take about 5 minutes.
- Once grits are tender and all liquid has been absorbed, remove from heat. Add half & half, butter, and shredded cheese. Stir. Add in any additional salt and pepper to your liking.
- Using the same skillet that the bacon was cooked in, add in minced garlic and cook for 1-2 minutes until the garlic is soft. Add in seasoned shrimp to the pan.
- Cook for 3-4 minutes until the shrimp is opaque in color, and begins to develop that perfectly golden color.
- Now it’s time to assemble. Grab your favorite bowl. Add your warm grits, peppers & onions, and then the shrimp. Lastly, top with the bacon, chopped green onion, and the red pepper flakes. Add another sprinkle of cheese if your heart desires.
- Enjoy!

Making this dish was so much fun and absolutely delicious! In total, it took me 45 minutes (15-minutes prep time), and it was an easy-to-follow recipe. My grits were seasoned perfectly (not too salty, but bursting with flavor). I used medium sized shrimp which worked but I plan on using the jumbo ones next time. This recipe is a hit for anyone looking for a good southern/low country style shrimp + grits meal. I Definitely would try this recipe again.

This is my second time making this delicious recipe. This time I added jalapeños peppers with the bell peppers/onions to give my grits a hot kick. From a person who loves following recipes, again this one is very easy to follow.
