Roasted garlic and caramelized onions really take this tomato soup to the next level! Its warm, creamy, flavorful, and the perfect soup for whenever your next craving for a grilled cheese kicks in!
What You’ll Need:
Roasted Tomatoes:
2 lbs. Roma Tomatoes, cut lengthwise
28 oz. can San Marzano Whole Peeled Tomatoes, liquid drained
1 Garlic Bulb
1/4 cup. Olive Oil + 2 tbsp.
2 tbsp. Coconut Brown Sugar (regular brown sugar works perfect too)
Sprinkle of salt
Soup Base:
1 tbsp. Butter (can substitute with olive oil)
1 Small onion, diced
1 tsp. Fresh Thyme
1/2 cup. Fresh Basil Leaves
2-3 tbsp. Tomato Paste (adjust based on how strong of a tomato flavor you want)
2 cups. Chicken Stock (can substitute with vegetable broth or water)
1 tsp. Honey
Optional Add Ins (for extra yummy-ness)
Milk/ Cream
Parmesan Cheese
Red Pepper Flakes
Additional Herbs
Instructions:
- Preheat your oven to 400 degrees. Wash and cut your tomatoes. Slice the top off of the garlic bulb. Open the canned tomatoes and drain the juice.
- Use foil or parchment paper to line a baking sheet. Spread fresh tomato & canned tomato on the baking sheet. Drizzle with olive oil, add brown sugar, and salt.
- In a piece of foil, drizzle the 2 tbsp. of olive oil over the garlic and tightly wrap it. Add it onto the baking sheet with tomatoes. Roast in the oven for 40 minutes. Set aside.
- Dice the onion. In a pot on medium/ high heat, add the butter. Once it begins to melt, add the diced onion. Cook for about 7-10 minutes stirring often, until the onions are translucent and have began to brown (that’s the good stuff).
- To the pot, add the thyme, basil, tomato paste, chicken stock, and honey. Give it a good whisk to combine.
- Allow this mixture to simmer on low heat for 40 minutes.
- Once the roasted tomatoes and the soup base have completed cooking, add both to a blender. Give the garlic bulb a good squeeze, add that roasted garlic to the blender. I recommend allowing a few minutes for the mixture to cool down a bit!
- Blend until smooth. If you like a chunkier soup, just give it a few pulses in the blender!
